Quick recipe: Sweet potato and gizzard sauce

You should definitely try this.


For the sauce, you'll need:
1/2kg of gizard (cleaned)
Mixed bell peppers
1-2 tablespoons of tomato paste
1 hot cherry pepper(grinded or chopped)
1 medium onion(chopped)
Vegetable/olive oil
Salt, stock cubes, curry

For the potatoes you'll need:
one or two medium Sweet potatoes.
salt.



Preparation of potatoes:
1. First wash and cut potatoes into smaller pieces.
2. Boil potatoes until cooked (Make sure it is not too soft), then drain water and set aside.

Preparation of gizzard sauce:
1. First wash gizzards and cut into smaller pieces if not already in small pieces.
2. Then steam gizzard with some curry, stock cubes and salt.


3. Next, heat up one cooking spoon of oil in a pan and then chopped onions and 2-3 table spoons of tomato paste and allow to fry. (I used a homemade tomato paste, which i made by basically cooking blended tomato until dried).

4. Once the mixture is fried, add steamed gizzards, and some of the gizzard broth. Add salt, pepper, curry, and stock cubes to taste and cook until there is little or no water left.

5. Last step is to add the chopped bell peppers, stir and leave for about 1-2 mins, depending on how cooked you want the bell peppers to be in the sauce.



And your gizzard sauce is ready to be served with potatoes or any other dish of your choice!!!




Note: I wanted to be creative, so I mixed some of the gizzard sauce with the potatoes, to make it like sweet potato and gizzard porridge, and it wasn't bad at all!!
