Vegetable frittata

Frittata which originates from the Italian word "Friggere" is a dish made mainly with eggs. It is quite similar to omelettes that's why the English cook "Delia Smith" describes it as Italy's open face omelette. Frittata comes in variations enhanced with ingredients such as vegetables, meat, pasta, noodles, potatoes and even plantains, which is now common among Nigerians (Plantain Frittata).

So I was thinking to myself yesterday, about what to have for breakfast and I figured I might as well try this plantain frittata that has been going viral recently but then, my bubble got burst when I realized there was no plantain at home (Noooo!!!!!😭😭). And beholdddd it dawned on me to make vegetable Frittata instead since we never run out of veggies in my house (because we're practicing healthy eating..LOL).


The good thing about this dish is that it can be eaten for breakfast, lunch or dinner. Whether you eat alone, or eat it in a sandwich with bread or any how you want to eat it, it still tastes great!

You'll need:

6 medium Eggs  Note: This was for 3 servings, so you can reduce the number of eggs to suit you.
2-3 tablespoons of olive oil or vegetable oil.
1 Large Onion, chopped.
2 bell peppers.
1/2 cup liquid milk
1 fresh pepper, chopped.
grinded dry pepper
3-4 pieces of lettuce leaf, chopped
salt, curry and thyme.
2 bacon strips chopped (Optional)
Note: You can add more vegetables of your choice, I just used what i had at home

Cooking steps:
1. Break eggs into a bowl, then add liquid milk and salt, dry pepper to taste and whisk together. Then add half of the chopped vegetables into the egg mixture.


2.  Next, heat oil in a non-stick pan, and fry onions and the other half of the chopped vegetables, and add curry, thyme and salt if needed. Cook and stir for 2-3 mins (You don't want the vegetables overcooked).


3a. Then gently pour egg mixture into pan and add bacon strips on top. Cover the pan and leave until cooked on a low heat, to avoid getting burnt.


OR
3b. To cook using oven, put the stir fried vegetables in a oven pan and gently pour egg mixture into a pan and add bacon strips on top, then allow to cook for 15-20 mins or until it is cooked.









VEGETABLE FRITTATA IS READY... EAT ALONE OR SERVE WITH ANYTHING OF YOUR CHOICE!
