EASY FRIED RICE RECIPE

Fried rice is a main dish, that is usually made with rice, vegetables, sea food, eggs, meat etc. From my little research, I found out that fried rice is a popular cuisine in parts of Asia and Africa.Contrary to popular belief, "Fried rice" can be a healthy food, depending on how it's prepared. For example you can decide to go for healthier choices of ingredients.(That's a topic for another day)πŸ˜ŠπŸ˜ƒ.

Growing up as a Nigerian, I've always known fried rice or any other rice as the typical Sunday lunch or dinner (Am sure many Nigerians can relate). Well today's "typical Sunday lunch or dinner"is the vegetable fried rice.
This kind of fried rice, as the name implies is made using vegetables. Since it was weekend and I was been busy the whole week with school, I thought to myself--"What better way to make up for the stressful week, than to have fried rice!!"). If you know what i mean😼😼😼😼😼

FRIED RICE RECIPE

Ingredients used:

Green beans

2 green bell peppers

Liver (Optional)

 Carrots

one medium can of sweet corn

Onions

Curry & Thyme, stock cubes, pepper

Rice

Vegetable or sunflower oil


Cooking method:

1. Soak and wash the rice with hot water or you can parboil the rice to get rid of it's excess starch(Just make sure it doesn't get too soft)

2. Chop the carrots, onions, green peppers, green beans, and steamed liver (Note: The liver is optional, and it can be replaced with shrimps, diced chicken or beef or even diced sausage, your choice).



3. Now if you're using liver or diced chicken or beef, you can stir fry it. Pre-heat one full cooking spoon of oil and first stir fry liver, then stir fry the chopped carrots, green peppers and green beans. Add curry, salt, and stock cube to taste. Then put aside stir fried veggies.



Note: make sure you don't put too much salt and stock cube since you'll be adding some to the rice).

4. Next, pour the washed rice into boiling meat or chicken stock and add enough water (If needed), to cook the rice. Note: Do not too much water so the rice doesn't get soggy

5. Depending on the amount of oil from your stock, add 1-2 cooking spoons of vegetable oil into the cooking rice. Add curry, stock cubes, onions, salt and pepper to taste.
Note: I usually prefer using green chilli than red peppers for fried rice, so the color of the rice doesn't change.

6. Remove the rice from the fire once it is dried and place a pot or pan on a lowered heat, to mix the rice with the veggies bit by bit.

7. Mix the rice and stir fried veggies, and sweet corn in batches for about 2-3 mins each batch, until all the rice and veggies have been mixed.


Now your fried rice is ready to be served with anything of your choice. In my case, with fried chicken yumm!!😎😎😎
